When we’ve put in a good day of game development, the folks here at Fat Cat like to unwind with a little creative food prep. This week, inspired by another Doctor we’re fans of, we tested out some Thyme flavored Liqueur in a Gimlet flavored Gelatine shot.

We used Knox Unflavored Gelatine, and followed the Knox Blox ratio of 1 package of gelatine to 1 cup of liquid. For the Thyme Liqueur, this was 1/2 cup of the Liqueur and 1/2 cup of water - (we probably could have used a little less of the liqueur). For the larger batch of Gin, it was 1/2 cup of Bombay Sapphire East (which has a sweeter, lemon-grass flavor) with 3&1/2 cup of water. The Lime was just a mix of Rose’s Sweet Lime and Real lime juice. Overall we used maybe 1/2 cup of corn syrup for sweetener, not too much since Gimlets aren’t themselves very sweet.
If you let the Gin batch set too thickly and can’t get the smaller cubes to be suspended, you can microwave briefly the batch to un-set the gelatine.
